Ingredients

For Pasta

  • 225 grams / 8 oz Spaghetti or any pasta
  • 2 tsp / 12 g Salt

For Avocado Sauce

  • 2 ripe Avocados medium size
  • ¼ cup / 50 g Greek Yogurt
  • ¼ cup / 4 g Coriander
  • 2 tbsp / 30 ml Lemon Juice
  • 2 Garlic Cloves
  • ½ tsp / 3 g Salt
  • ½ tsp / 1 g Black Pepper

Instructions

Cook The Pasta

  • Fill the Dutch oven or a large pot with water, add salt, and bring it to a boil.
  • Add spaghetti or any pasta of your choice and cook according to the package directions.
  • Reserve 1 cup of hot pasta cooking water before draining the pasta. Set it aside.

Prepare The Avocado Pasta Sauce

  • Cut the avocados in half and remove the pits. Scoop the flesh of the avocado into a blender or food processor.
  • Add Greek yogurt, coriander, lemon juice, and garlic cloves to the mix.
  • Season the sauce with salt and black pepper. Blend the mixture until it’s smooth and creamy.
  • If the sauce seems too thick, add some of the reserved pasta water and blend again until you reach the desired consistency.

Combine Pasta and Sauce

  • Grab a large bowl, and place the warm pasta in it.
  • Pour the avocado sauce over the pasta and toss gently until the pasta is evenly coated with the sauce.
  • Add a little more pasta water to thin out the sauce if needed.

Taste, Serve, and Enjoy!

  • Taste the avocado pasta and adjust the seasoning to your liking.
  • Serve the avocado pasta hot, garnished with parmesan, fresh coriander, or your favorite toppings!
