For Pasta
- 225 grams / 8 oz Spaghetti or any pasta
- 2 tsp / 12 g Salt
For Avocado Sauce
- 2 ripe Avocados medium size
- ¼ cup / 50 g Greek Yogurt
- ¼ cup / 4 g Coriander
- 2 tbsp / 30 ml Lemon Juice
- 2 Garlic Cloves
- ½ tsp / 3 g Salt
- ½ tsp / 1 g Black Pepper
Cook The Pasta
Fill the Dutch oven or a large pot with water, add salt, and bring it to a boil.
Add spaghetti or any pasta of your choice and cook according to the package directions.
Reserve 1 cup of hot pasta cooking water before draining the pasta. Set it aside.
Prepare The Avocado Pasta Sauce
Cut the avocados in half and remove the pits. Scoop the flesh of the avocado into a blender or food processor.
Add Greek yogurt, coriander, lemon juice, and garlic cloves to the mix.
Season the sauce with salt and black pepper. Blend the mixture until it’s smooth and creamy.
If the sauce seems too thick, add some of the reserved pasta water and blend again until you reach the desired consistency.
Combine Pasta and Sauce
Grab a large bowl, and place the warm pasta in it.
Pour the avocado sauce over the pasta and toss gently until the pasta is evenly coated with the sauce.
Add a little more pasta water to thin out the sauce if needed.
