Dry Ingredients
- 1 & ¾ cups / 220 g All-Purpose Flour
- 1 tsp / 4 g Baking Soda
- ½ tsp / 1 g Cinnamon
- ¼ tsp / 1.5 g Salt
Wet Ingredients
- 3 medium-size Ripe Bananas
- 2 large Eggs
- ½ cup / 110 g Brown Sugar
- ½ cup / 115 g Melted Butter
- ⅓ cup / 82 g Yogurt
- 1 tsp / 5 ml Vanilla Essence
- 1 cup / 150 g Blueberries plus more for the top of the bread
Preheat The Oven and Prepare The Pan
Prepare Dry Ingredients
Grab another large bowl and combine flour, baking soda, cinnamon, and salt.
Stir the dry mixture well until no clumps remain and set aside.
Mash Bananas and Mix Wet Ingredients
Grab a large mixing bowl and add the bananas. Mash the bananas with a fork until they are mostly smooth.
Add brown sugar, crack the eggs, melted butter, yogurt, and vanilla essence to the mix.
Now, whisk until everything is well combined.
Set the bowl aside for later use.
Combine The Dry And Wet
Now, add the dry ingredients to the wet mixture, whisking just until everything comes together.
Be careful not to overmix—just blend until combined.
Add Blueberries and Bake
Toss the fresh blueberries with a little flour, and using a spatula, gently fold them into the batter.
Pour batter into the prepared loaf pan and smooth the top.
Bake the blueberry banana bread in the preheated oven for about 55-60 minutes or until a toothpick inserted in the center comes out clean.
