- 2 tbsp / 30 ml Olive Oil
- 1 small size Red Onion Finely Diced
- 3 cloves Garlic Grated
- ½ cup Red Bell Peppers Sliced
- ½ cup Green Bell Peppers Sliced
- 2 cups / 280 g Shredded Chicken boiled
- 1 tbsp / 16 g Tomato Paste
- ½ tsp / 1 g Cumin Powder
- ½ tsp / 1 g Paprika
- ½ tsp / 1 g Chili Flakes
- ¼ tsp / 1.5 g Salt
- ¼ tsp / 0.5 g Black Pepper
- 2 tbsp / 0.8 g Coriander chopped
- 2 sliced Bread
- 2 tsp / 10 g Butter
- 1 cup / 112 g Shredded Mozzarella Cheese
Cook the Sandwich Filling
Put olive oil in a pan and set the heat to medium-high.
Add the red onion and sauté for a few seconds.
Add 3 cloves of grated garlic to the sauteed onion and cook until it becomes fragrant.
Add the green bell peppers and red bell peppers, and cook until they become tender.
Add the Chicken and Seasonings
Boil chicken breasts or thighs, and shred them.
Add the chicken shreds to the sauteed vegetables.
Now, add tomato paste, cumin powder, chili flakes, paprika, salt, and black pepper.
Cook the filling for about 1 to 2 more minutes.
Add the coriander and cook for a few seconds.
Prepare the Sandwich
Take 2 slices of bread for each sandwich.
Spread about 2 teaspoons of butter on each bread slice.
Transfer the chicken sandwich filling to one piece of bread evenly.
Add shredded mozzarella cheese on top of the filling evenly.
Put the other piece of bread on top of the cheese.

Bread Buring Too Fast: You need to make sure the heat is on low to medium when toasting the bread. If you toast the bread on high heat, there is a greater chance for the bread to burn.

Filling Too Dry: Because you will not be using mayo, your sandwich filling could easily become too dry. So, you need to make sure that you are using enough oil to saute the filling. Also, overcooking the chicken can make the filling dry.

Cheese Not Melting: If the cheese on the filling does not melt properly, you need to put the heat on low and toast the sandwich for longer.

Sandwich Falling Apart: You can’t use too much sandwich filling, or it might just start to fall apart. Also, using rustic bread is a great idea because it helps with structure.
