No Flour, No Yeast Red Lentil Bread

Red Lentil Bread made with no flour and no yeast. This easy high-protein bread has a soft, hearty texture and needs just a few simple ingredients.

Ingredients

  • 2 cups / 380 g Red Lentils
  • ½ cup / 125 g Yogurt
  • ¼ cup / 60 ml Olive Oil
  • 2 medium-sized Eggs
  • 1 tsp / 6 g Salt
  • ½ tsp / 2 g Baking Soda
  • 1 tsp / 4 g Baking Powder
  • 2 tsp / 10 g mixed Seeds

Instructions

Rinse and Soak the Red Lentils

  • Rinse the dry lentils properly.
  • Soak them in water overnight.

Drain the Lentil

  • Make sure you drain the lentils properly before putting them in the food processor.

Blend the Lentil Batter

  • Add the soaked and drained red lentils, yogurt, eggs, salt, baking soda, and baking powder to a food processor.
  • Process everything until the mixture is smooth.

Prepare the Pan and Pour in the Batter

  • Take out an 8x4-inch loaf pan.
  • Grease the inside of the loaf pan properly.
  • Line it with parchment paper or a baking sheet before pouring the red lentil bread batter.
  • Pour the batter into the loaf pan and shake softly to level out everything.

Bake, Cool, and Slice

  • Preheat your oven to 356°F or 180°C.
  • Put the pan in the oven and bake for 40 to 45 minutes.
  • Take the pan out and let the bread cool down completely on a wire rack before slicing.
  • Take a bread knife and slice the bread.
  • Serve and enjoy.
