Turkish Rice Pudding Recipe (Sütlaç) – Creamy & Authentic

Ingredients

For the Pudding:

  • ¼ cup short-grain rice
  • 1 cup Water
  • 4 cups Whole Milk
  • ½ cup Granulated Sugar
  • 2 tbsp Rice Flour
  • 2 tsp Vanilla Essence

For Garnish:

  • Pistachio
  • Cinnamon

Instructions

Cook the Rice

  • Rinse and clean the rice. Then, drain the water.
  • Add the rice to a pot with water and cook till it softens.

Add Milk, Sugar, and Simmer

  • Now, add milk and sugar to the rice after it’s cooked and stir continuously.
  • Stir until the rice and milk come to a boil, then cook on a low heat for 20 minutes or more until the rice is tender.

Thicken the Mixture

  • Mix the rice flour with a bit of cold milk.
  • To thicken and bind everything, add the mixture to the pudding slowly, while stirring continuously.
  • Cook for another 5 to 8 minutes.
  • Add vanilla essence and mix everything well.
  • Check the consistency, which should be runnier than pudding.
  • Add more milk if it’s too thick.

Transfer to Oven-Safe Bowls

  • Transfer the pudding into small clay bowls or ramekins.

Bake Until the Top Caramelizes

  • Set the oven to 400 degrees Fahrenheit, 200 degrees Celsius.
  • Put the ramekins in the oven and bake 10-15 minutes or until the top caramelizes.
  • Check the pudding regularly when it’s in the oven.
  • Cool, And Enjoy!
  • Take the bowls out of the oven and let them cool down to room temperature.
  • Then transfer it to the refrigerator to chill before serving.

Notes

  • Pudding Too Runny: If you do not cook the pudding for long enough or add too little starch, the rice pudding might come out too runny. So, make sure you use the right amount of rice flour and cook it until it thickens.
  • Pudding Too Thick: Adding too much starch could thicken the pudding too much. If your pudding comes out too thick, add as much milk as needed and keep stirring constantly till it is the right consistency.
  • Rice Undercooked: You need to make sure the rice is not too hard, which can ruin this Turkish rice pudding recipe. Cook the rice until it softens.
  • Top Not Caramelized: If your pudding does not get that signature caramelized top, it means that the oven was not hot enough. Set the temperature to high and bake for a few more minutes till the top turns golden brown.
