- 1 cup / 250 ml warm water
- 200 ml whipping cream
- ½ cup / 100 g Sugar
- 1 cup / 227 g Cream cheese
- 1 cup / 225 g Mascarpone cheese
- 1 tsp / 5 ml vanilla essence
- 10-12 Lady Finger
- 2-3 tbsp / 10 g Cocoa powder
For the base
- 10 Pieces Digestive biscuit
- 4 tbsp / 60 ml Melted butter
Prepare the Base
Take out your food processor and grind 10 pieces of digestive biscuits finely.
Add 4 tablespoons of melted butter to the biscuit grounds and give it a good mix in the food processor. It should take only a few seconds, and you will have your crumbled crust for the base.
Bring in an 8-inch springform pan and start putting the biscuit and melted butter mixture into it.
Make sure you spread out the mixture evenly and press it down firmly into the pan to make the crust, and put it in the fridge for at least 15 minutes to let it set properly.
Prepare Coffee Mixture
Mix 1 cup of warm water with 2 tablespoons of instant coffee in a mixing cup until all the coffee has dissolved.
Take a flat, deep dish, pour the coffee mixture into it, and set it aside for later.
Make the Cheesecake Filling
Add whipping cream and ½ cup of sugar into a large mixing bowl and whip it using an electric beater or whisk by hand till you see a soft peak.
Add 1 cup of Mascarpone cheese, 1 cup of cream cheese, and 1 tablespoon of vanilla essence to the whipped cream mixture.
Now, mix well with a whisk or an electric beater.
Assemble and Chill The Cheesecake
Take out the biscuit crust and layer about half of that cream mixture on top of it.
Add the lady fingers into the coffee liquid you set aside before, and soak them for about 2 to 3 seconds.
Take the soaked lady fingers and rest them gently on the whipped cream you layered on top of the crust. Make sure everything is level and break apart a couple of lady fingers if needed, so that they fit into the pan.
Add the rest of the whipped cream on top of the lady fingers and make sure it’s an even layer.
Cover the entire pan with plastic wrap and put it in the fridge to let it set overnight.
Add Topping, Serve, and Enjoy!
When you want to serve the dessert, take it out of the fridge, carefully take apart the springform pan, and garnish the cheesecake with cocoa powder.
Enjoy this beautiful cake with a cup of coffee or tea.
