For Pasta
- 225 grams / 8 oz Spaghetti (or any pasta)
- 2 tsp / 12 g Salt
For Avocado Sauce
- 2 ripe Avocados (medium size)
- ¼ cup / 50 g Greek Yogurt
- ¼ cup / 4 g Coriander
- 2 tbsp / 30 ml Lemon Juice
- 2 Garlic Cloves
- ½ tsp / 3 g Salt
- ½ tsp / 1 g Black Pepper
Instructions
Cook The Pasta
- Fill the Dutch oven or a large pot with water, add salt, and bring it to a boil.
- Add spaghetti or any pasta of your choice and cook according to the package directions.
- Reserve 1 cup of hot pasta cooking water before draining the pasta. Set it aside.
Prepare The Avocado Pasta Sauce
- Cut the avocados in half and remove the pits. Scoop the flesh of the avocado into a blender or food processor.
- Add Greek yogurt, coriander, lemon juice, and garlic cloves to the mix.
- Season the sauce with salt and black pepper. Blend the mixture until it’s smooth and creamy.
- If the sauce seems too thick, add some of the reserved pasta water and blend again until you reach the desired consistency.
