Ingredients

- 1 cup Water
- 4 cups Whole Milk
- ½ cup Granulated Sugar
- 2 tbsp Rice Flour
- 2 tsp Vanilla Essence

Instructions
Cook the Rice
- Rinse and clean the rice. Then, drain the water.
- Add the rice to a pot with water and cook till it softens.
Add Milk, Sugar, and Simmer
- Now, add milk and sugar to the rice after it’s cooked and stir continuously.
- Stir until the rice and milk come to a boil, then cook on a low heat for 20 minutes or more until the rice is tender.
Thicken the Mixture
- Mix the rice flour with a bit of cold milk.
- To thicken and bind everything, add the mixture to the pudding slowly, while stirring continuously.
- Cook for another 5 to 8 minutes.
- Add vanilla essence and mix everything well.
- Check the consistency, which should be runnier than pudding.
- Add more milk if it’s too thick.
Transfer to Oven-Safe Bowls
- Transfer the pudding into small clay bowls or ramekins.
Bake Until the Top Caramelizes
- Set the oven to 400 degrees Fahrenheit, 200 degrees Celsius.
- Put the ramekins in the oven and bake 10-15 minutes or until the top caramelizes.
